After five years of employment, i was laid off due to the reason given of financial difficulties with the business. They told me my salary was too high and they had to let me go. The next day, a fellow employee was given my position at a higher salary than I had. Can they do this?

Assuming that you are not a union employee and are an at-will employee, sure they can do that.
