Colorado. What is the statute of limitations for an insurance company to sue? Also, is it from the date of the accident or the date the insurance company starts contacting me for repayment?

The SOL is 6 years. The date would start the day it was determined you were liable for the debt.

Then the judge will decide after they sue you. What happened in the accident?

And the SOL starts running on the date of the accident - the date the damage was sustained.

Also, racer is incorrect. This isn't a debt SOL, it's a tort SOL. Which in CO is 2 years for personal injury or property damage, and 3 years for wrongful death.
