What is the name of your state (only U.S. law)? North Carolina.
What is the statute of limitations or is there one for employee theft?

Depends on how much and in what manner it was stolen. There's a two year statute of limitations on most misdemeanors, but if it was elevated to the level of a felony there is no statute of limitations.
