I live in Oregon. If I quit my job or am fired, can I legally get a complete copy of everything in my employee file? Is there anything that can be exempted? Thanks.

Assuming CA law is the same in your state, you are only entitled to a copy of all documents in your file that you signed. Otherwise, you have a right to inspect the entire file but not get a copy of the unsigned documents. Such inspection usually occurs in the HR office during normal business hours.
