What is the name of your state (only U.S. law)? Texas

Mom died with an airtight will, but by the time she passed all of her assets were in the form of CD's and joint bank accts. The CD's all had POD beneficiaries. Basically there is nothing left to probate. Bill have all been paid.
Does her will still have to go through probate and what happens if it doesn't?

No, you don't have to probate the will.
Nothing will happen due to the will not being probated - it only existed to transfer remaining assets, and that was accomplished.
You are done.
Technically, someone should file a tax return for Mom for the year she died (Mom may not have needed to file; Ldij would know more about that).
My condolences on your loss.
