My wife and I are getting a divorce. I originaly filed and she returned an answer. In her answer she stated "I want nothing from the petitioner, All I want is the divorce." Can she change her mind or does her answer stick?

until the judge signs, just about anything can be changed. Additionally, her statement is very open ended. While she states she doesn't want anything from you, I would still presume she wants what she believes to be hers. Trying to figure out what is whose can be one heck of a problem all in itself.
