What is the name of your state (only U.S. law)? Florida

My husband and I would like to change who gets custody of our children in the event of our deaths. Our original will has a first and a second listed. We would like to omit the first and use the second couple listed and have a new second. Can we simply put this in writing and have notarized or do we have to obtain a complete new will? Thank you.
