What is the name of your state (only U.S. law)? CA

I have begun a podcast and want to avoid any and all legal conflicts.

How do I prove a person gave their permission for me to use their voice/ opinions for the purpose of my interview?

Is it simple enough to ask them first thing in the interview, "Is it OK if I record our conversation? How about if I edit it/ clean it up/ shorten it/ reuse it out of context?"
