What is the name of your state (only U.S. law)? NH

I'm trying to notify a company that was supposed to do some work for me, but they never did and I'm trying to get back my 1500 deposit. I understand that I need to notify them of my intentions and I've sent them a registered letter stating I want my money within 30 days, but they don't sign the letter that I've sent to them. Is there a way around this?

Send a copy first class mail, and keep the returned, certified letter unopened to show to the court if necessary.
