What is the name of your state? California

As a company we are sueing an individual based on the infomation that individual provided on the signed contract, and we have later found out we had misread the spelling of the name of the individual(like n to u since it was in handwritting), but the individual did not correct us on that error all this time we were sending her statements.

What do we need to do now that we found out the name error AFTER we filed the case to Small Claims and served this individual.

Your best option to minimize challenges to the judgment would be to dismiss your current action and refile using the correct name.

Or you can amend your judgment to include the 'correct' spelling and serve notice on her.
