The statute of limitations is 3 years and I'm suing for unpaid wages for a period of employment lasting about 3 months.

Does this statute date back to the very first day of employment, or does it correspond with the last day of employment? Or does it parse whatever you can claim, depending on which day within that period of employment you file?

None of the above. The SOL starts when your employer failed to pay you on your scheduled payday.
