3 times postponed court hearing for NY state speeding ticket

I received a speeding ticket in New York state back in late August. After returning the ticket with a not guilty plea I was assigned a court date in October. The court date has since been postponed three times on account of the officer being out on medical injury. How many times may the court legally postpone a hearing and is there anything I can do to fight this?
