Well, take a picture or record a video to take with you to court for when you fight it. If you choose to fight it. It will help you quite a bit...

You would probably have a heck of a time trying to prove that the sign was changed to trap people into speeding violations in a school zone.

What is the regulation that signage must conform to? You probbably don't know so to assume that it does not comply is as bad a guess you suggesting entrapement.
To check if a specific sign does in fact meet regulation you would have to check the MUTCD (Manual on Uniform Traffic Conrol Devices) used by your state. I did a search but this here: [url]http://mutcd.fhwa.dot.gov/pdfs/2003r1/Ch7.pdf[/url] is the 2003 version and have not been able to find a more recent version... You might want to search some more...
if you are unable to find a newer one, check out page 7B-4, and you will find all the info you need as far as signing. It might also dispell any wild theories you might have suggestig entrapment in that it should describe the process of changing a sign from one type to another.
