I want to start my own company with all the paper work through the state. But, I'm not 18 for a few more months. Are there any problems I might run into with the state of Utah? Or should I wait until I'm 18?

An 18-yr old is not of legal age and cannot sign a contract. Whether that matters depends on the nature of your business. Call the UT dept of licensing & ask if you can get a business license at 17. Good luck on your venture. You sound like a real go-getter. :)
