My wife and I plan on releasing a DVD, CD and printed manual that enables the avearge consumer to make better eating choices. Do we need to include a disclaimer, and if so, must we have a lawyer write it for us, or can we write one ourselves?

You can write one yourself, but make sure to have a lawyer WHO SPECIALIZES in the field take a look over. Contact the local bar (association, that is) for a recommendation.
