Can an employer in California change an employees status from non-exempt to exempt without notice? I was only made aware of this after viewing my pay stub

Since your original question on this issue indicates that you did not have a pay decrease, then as long as your job duties qualify you to be exempt, yes, this is legal.
And it will be legal the next time you ask, too, with the same qualification.
