We found out today 12/1/2016 that our health insurance was cancelled due to non payment by employer. We get paid weekly and each week our portion gets deducted from our paycheck.
Our insurance was cancelled 10/1/2016. Our employer owes us for 8 weeks worth of insurance that we paid for but it was cancelled.
He now says he will compensate us the money owed to us, but says that it will be a couple of months. What are the laws on that? Is he able to do partial payments here and there or does he need to give it to us immediately?

Unless Kansas is very unusual, there are no laws that specific. He needs to either reimburse you or provide alternate insurance, but there is no law I am aware of that puts a time frame on it.
