My response:

Write a handwritten Codicil with your changes. Sign it, and date it, in the presence of three witnesses. Have the witnesses sign it too. Attach it to your Will.

For example, you could write, "In paragraph three of my Will, I have named John Doe as my beneficiary. With this Codicil to my Will, however, I now name Anthony Roe as my beneficiary in place and stead of of John Doe."

Make copies and give the original to someone you can trust.
