What mechanisms or language can be used by seniors with adult children where the seniors want to make sure their children inherit the marital estate after the death of the first senior and the remarriage of the surviving senior or in the case that someone wants to take advantage of the surviving senior to direct his/her estate to that unscrupulous person?

An irrevocable trust is one good way to do it.

This is definitely not a DIY. Once an irrevocable trust is done it (obviously) cannot be changed.
