What is the name of your state? North Carolina My question is as of right now my estate is small. Would writing down my wishes, and having the will signed by a Notary, would that hold up in court in case of a legal challenge?

It might, and then again it might not, but why take that chance? There are will 'kits' in available on the internet for almost nothing. Use them. You only get one chance to get it right. [That is, unless you WANT to cause headaches for those you mention in your will.........]
