Will my grandmother have to do anything special to transfer her property, which she owned jointly with my grandfather who is deceased, into a living trust which she is now creating? Basically, does she have to go through probate? Also, she lives in California.

FUNDING THE TRUST IS CRITICAL. It is not brain surgery, but how she does it depends on the nature of the property (for example, with real estate filing a copy of the death certificate first, then a deed from her to the trust) and what the trust provides.
