Will/Estate - can it be changed after one of the spouses dies?

Can the Will/Estate be changed after one of the spouses dies?

My grandmother passed away a few years ago and recently my grandfather had his new girl friend move in.
My consern is that if they get married, can he change the Will/Estate?
