What is the name of your state (only U.S. law)? oregon, sorry if this is the wrong place to post this. I am a food production worker and had to leave work early do to a bad case of diharea. I was informed that it would be unexcused for me leaving early. Is it legal to do that? I am handling food that is shipped worldwide. thanks

The law does not address "excused" or "unexcused" absences. If the employer wants to characterize this as unexcused, there is no law that is going to prohibit him from doing so.
