I recently had my air conditioner at home begin not working properly so I called Frigidaire because my manual said it was covered by a seven year warranty. They scheduled a service, and the guy came out and fixed our ac in a few days. We signed no papers, and he specifically said we owed him nothing. Now he is calling saying we owe him money. Frigidaire is now saying the unit is not under warranty. Are we legally liable to pay now?

What is the reason that Frigidaire gives for it not being under warranty?

They say I was given incorrect information on the phone and apparently the manual that was in the box is wrong too. I'm currently awaiting a call back from a supervisor but the servicer is borderline harassing us through daily calls and messages.

Note that the warranty on HVAC is usually only parts after a very short period of time. You certainly do owe the installer for his labor at the minimum. Anyway, the warranty is between you and the manufacturer, the contractor is not necessarily under any obligation to get in the middle between your dispute with the manufacturer. You likely should pay for the part and pursue it furhter with Frigidaire.

Note that the manual that came with the unit clearly states "Your appliance is covered by a limited seven-year warranty. Electrolux will pay all costs for repairing or replacing any parts of this appliance that prove to be defective,". And like I told them we would have just replaced the unit if it was not going to be covered by the warranty. It is a window unit and the cost of repair is half the cost of a new unit. The only reason we had the service done is because we were told it was covered. Also the servicer is claiming that Frigidaire will pay him for his labor but not the part which makes no sense to me.
