Bad Plumbing Job

We hired a plumbing company to come in and install a simple shower fixture (replacement of an existing and switchover to a different brand. They also extended the height of the shower head by 6 inches.

However the plumber did not do the finish work and left without placing a threaded ear drop or a 3/4 inch threaded pipe. He left a 1/2 inch capped copper pipe for the faucet.

When I called them they advised that I would have to hire someone else to finish the work. My wife had previously signed the completed work form which states that the work was completed in a satisfactory manner. Additionally, I just discovered drywall damage on the wall behind the shower.

I disagree and have stopped payment on the check, I'm notifying them by mail of defect and advising that I will pay as soon as they complete the job they were hired to do.

Not the ideal solution, but how might I better prepare myself if they attempt to place a lien on the house? It was a quick $225 and I know I already overpaid, but I needed to get this done quickly.
