I haven't been served just yet, but it should happen sometime this week. Is it too late to avoid dealing with the courts? What are my options? Any help is greatly appreciated!

You've had plenty of opportunity to avoid court but you chose not to.

Now that the creditor or collection agency has already hired the lawyer and paid the filing fee, they tend to go "all in" until they get a judgment.

Option: Pay the debt in full and the case gets dismissed.

Option: File bankruptcy and the debt gets discharged.

You do have one advantage. Texas prohibits wage garnishment for consumer debts so you might be able to arrange a payment plan in exchange for a dismissal. or a lump sum discounted settlement.
