Blackmailing Boss

Hi,
An employee was caught on video taking money from register. Later on employee was confronted by boss and police. The employee doesn't admit to taking money.... I think it was about 10.00. The store was broken into night before and 300.00 was missing from registers. The boss assumes it was that employee, even though she has no keys and there is no evidence that says it was her. The boss makes her sign a statement saying she will pay back money out of her last check for the 300.00 and the 10.00 or she is going to jail now. Is this legal? She signed the statement to keep from going to jail.

If she didn't steal the $300.00 why would she admit to it? The DA would still have to prove that she did it in order to get a conviction. No proof = no conviction.

It seems as if she was caught on video taking the $10.00. If she didn't take the $300.00 why would she admit to it as weenor questioned? They would have to prove she took it - just because the boss assumes she took it isn't proof.
