Can a minor copyright material and retain full rights to it just like anyone else? Does a parent/guardian have to undersign, or is copyrighting material limited only to adults? Also, under what age IS a "minor" in this case?

Anyone who produces a body of work may copyright it. As for definition of a minor, anyone under the age of 18, but it differs for each state and for which situation you are addressing.
