Can I sue a client for part of a balance?

I act on behalf of a UK based company and am a bit unclear as to whether we can sue given the scenario below.

The client is under contract with us and owes us over £15,000.
£1,750 of this is old and they have not come up with a valid reason for non payment.
They consistently pay their other invoices and we have to date been unable to collect the £1,750.
Can I sue the client for the £1,750, however, let the company keep trading with us in the interim?
