Our application for a color green stylized mark was approved by the trademark office. Do I still have to submit another application for another color (say black) of the same stylized mark to protect my mark from others who might want to copy it?

Generally no, but it might be worthwhile to do so. If you don't register the second color, then if infringement ever does occur, there may be confusion as to whether the cause of action arises under trademark statutes or common-law, and that could affect remedies and damages.
