I am responsible of copyrighted material - music specifically. How can I be assured I am being paid justly for its use?

Get either a lawyer or other representation. Those with record contracts generally are protected by industry groups to include the Harry Fox Agency. Composers performance rights are secured through the PRO's such as ASCAP and BMI.

What you have to do depends on what material you are talking about and whether it has been made into records/cd's etc... already.
