Hypothetically, if someone were to arrive at residence and find a person physically abusing his s/o and that someone were to step in and defend the s/o physically, could the person be prosecuted for assault?

The only answer to that question is yes.

But if you meant to ask could the person be convicted of assault the only answer to that is maybe. It depends on the circumstances.
