What is the name of your state?All events within state of California.

How can I document an email that was sent by me, using MSN Hotmail, in order to preserve it for use in litigation later.

Currently, the copy is in my sent items folder and will be purged in one week automatically by Hotmail.

Also, how easy is it to obtain deleted email records for use in litigation and or a police complaint - does Hotmail keep everything how can it be requested ?

Your best bet at this time is to print a hardcopy, including the header information.
Then, if needed, you can subpoena your ISP's records to confirm that at the time/date shown in the headers, you were logged on to that ISP/DNS address.
