What is the name of your state (only U.S. law)? Texas. My neighbor started a fire in his yard to burn brush. The fire ignited the grass and spread, ultimately burning down to the ground a house that I owned in an adjacent yard. They have homeowner's insurance, I do not. Can I pursue this through their insurance company?

You pursue it through them and they will contact their insurance company. The fact that you did not have insurance, means that you will have to hire your own lawyer and pay all your expenses. If they are liable, you will be reimbursed for your loss.
