I was fired from a job that I loved 2 days before I became a permanent employee. It was expressed orally that I was hired. I was fired for smoking in the office and there was another person who did the same thing, but my boss had her sign a paper saying she saw me, and he told her he would not write her up, also my boss smokes in his office. Can they do this.

Generally "Yes". Especially if your state has an at-will policy. An at-will policy means that the employer can terminate you at any time, with or without a reason. Also, you can quit at any time with or without a reason.
