What is the name of your state? arizona
if my wages are garnished to satisify a court ordered judgement, and they are garnished thru the trustee, do i have a right to know and to have a statement of where these funds are going?

Garnished thru a trustee ? Your employer gets served with the garnishment order, takes the funds out of your check and sends it to whoever is owed or is collecting the money.. usually a law firm.

They're paying whoever sued you. Look at the lawsuit.. who was the Plaintiff ?? That's who should be getting your hard-earned cash.
