I have a question. There was a small part of our kitchen(underneath our fridge) were there was a leak. We filed a claim and the homeowners insurance went through all the necessary process and gave us a sufficient amount of money to replace the whole kitchen floor. They said they couldn't find the exact type of wood that is originally on there(we bought the home in 2012, first owners) so we would have to replace the whole wooden floor(which is basically the whole section of the second story). Since the damage was only done in a small section of the kitchen(basically underneath the refrigerator) would I get into trouble if I only replace that small section, with a different type of wood(since it won't really be seen as it's right underneath the refrigerator) or would I need to replace the WHOLE kitchen wooden floor??

No, you wouldn't get in trouble and you are free to repair just that small section.

Whatever money you have left over is your compensation for any reduction in value of your house because of the partial repair.

The other thing you have to understand is if you have another water damage loss that destroys all your wood flooring, the insurance won't pay for it because they already paid to replace it and you'll need to come up with the money to fix it all yourself.
