(Florida) I have been diagnosed with stage 3 cancer and I don't want to undergo treatment. Will my life insurance policy still pay out when I die?

Generally yes, that shouldn't enter into paying out the policy proceeds.
However, most policies have a contestable period (usually 2 yrs. from when the policy was issued) where they can contest payment if they believe they have reason to do so.

As the other responder noted, we can't read your policy provisions. You
will need to read them or talk to your ins. agt.
