I have been visiting my father (a legal alien) in Kansas on a tourist visa and am going to apply to stay in the U.S under my father's address. However, in 3 weeks my tourist visa runs out and I am having to leave the country. I understand I will have to leave the country to gain another 3 month visa so I may apply to stay in the U.S but I was not wanting to fly to Scotland. Is it possible to fly to Canada instead for a day before flying back to gain another 3 month visa or is Canada classed as part of the U.S?

No. The US immigration officer will just admit you back into the US using your current visa. So, if you have a 3 month visa, travel to Canada after 2 months and then return, you will still only have 1 month left of the visa.

Also, if you return to the US so quickly after leaving, you *may* be denied entry. You should apply for a multi entry B1/B2 visa.
