I am selling my car via the internet to a resident of CA (I live in NJ) which will be shipped. How do I protect myself and my buyer with payment for the car? He wants to pay when he receives the car; I don't know him to trust him.

Either have the payment put in escrow, pending the delivery of the car, with a bank or other reliable party, such as an attorney, that you can trust, or have the shipper deliver it only on receipt of payment if you can work that out with the shipper. However, in the latter case, you risk losing shipping costs in two directions if the buyer does not pay.
