We travel 7-8 months of the year in our motor home. We have Living Wills and Health Care Proxies drawn in New York State. In case of an accident or illness, are these documents valid in all U.S. States?

Typically, yes they will be valid. Each state may have its own requirement for withdrawing life sustaining care (i.e. having 2 doctors evaluate one's condition, etc.) and honoring these documents.
