I was wonder what my rights are regarding my vested stock options should I decide to leave my current company.
How long do I have to claim them?
Can I claim them?
How do I notify them of my intent to claim them?

This all depends on the rules that were set in place when the stock options were granted. Your company probably gives you 30 to 90 days to excercise vested options after terminating employment, but there's no way for anyone here to know. You'll have to either find the paperwork that was provided to you when the stock options were granted, or talk to your HR department.
