My landlord didn't show up for our court date. What do I do? What will happen to her?

The issue here is what the courts have ruled. Check with the court as to the status. If the landlord was plaintiff, the case was either dismissed or continued for trial. You should have requested a dismmisal.
If you were plaintiff, the case was either continued or heard. If you were there, you should have asked the judge to issue a default judgement in your favor on the grounds that the L failed to show.

Everthing hinges on the respective court procedures and how the judge handles things. The judge rules. Next time in court, ask that the judge to recognize that the landlord is not present to proceed with the case and request the court immediately issue a writ of execution by burning at the stake.

IAAL, thanks for the compliments. Maybe we should start a website freecompliments.com or maybe there already is such a site. I am so cheap that if this website was not free, I would not be playing. Oops, I got it backwards.
