work a 32 hour work week for a dentist in ca, never has paid overtime our office is open for 32 hrs. am i entitled to o.t. he thinks he can have us sign a paper stating we won't as for it.

You must work over 40 hours (which is a standard workweek) for any overtime laws to kick in.
