Does anyone know if a precedent is set in a case where there is a no contest plea, and a defendant gets probation for a serious crime? Or does a case only set a precedent if it goes to trial?

What do you mean by setting a precedent? Cases are precedent, meaning that other courts must follow the law set forth in the case, only if they are officially published in the case reporters. Only a fraction of cases are published, and only a fraction of published cases are plea cases.
