Remove work from clients website?

I made photos for a clients brochure and a website. I also designed the brochure and website. All work was completed and published in May with my name and copyright notice. I received partial payment. The fee for the web photos was withheld (these are a different type of digital file than for a brochure hence the additional cost). I have explained this and also sent another invoice for finance charges as I note such on invoices.
The client has now hired an in-house person to produce future work. They are adding new photos/captions but the 'foundation' of the site is still my design and retains my name.

I am the web site administrator and as such have the ability to either delete my work or temporarily shut the site down.
1) If I do either to prompt the client to pay me would I be taking a legal risk?
2) If I am paid can I still require an additional fee for copyright release if they want to continue to use my 'foundation'?
3) What if they refuse to pay finance charges or a copyright release fee?

Appreciate any advice!

If they owe you for a contract, they must pay that and all interest.

It may be you don't owe the copyright, you just created the website.
