What is the name of your state? NY
We are going to be subleasing an apartment from a current tenant of an apartment building. [This will be a legal sublet with approval from landlords]. The current tenant is requiring that we get renters insurance and name him as additional insured [we think his attorney told to him to put this]. We are having terrible trouble finding insurance companies that will include an additional insured on their policies. Has anyone else done this is the past? Any tips?

Keep looking. While not exactly common in residential leases, it does occur, and companies do provide such coverage.

Absolutely, especially since most apartment complexes REQUIRE renters insurance, and ask to be placed as AI on the policy, so that they can be made aware 1. that you have coverage 2. if the policy is going to or has cancelled.
