Roofing co. said we would pay less than deductible, then charged full deductible

I received a call from my roofing company's collections center stating that there is an outstanding amount due of $1500.

Part of this amount was supposed to be paid through my insurance, as explained by the roofing company agent in an email dated 12/26/18: "For just the roof replacement you shouldn't be paying more than $300 out of pocket for the project since there was additional money for gutters. If you were to have the gutters replaced as well, your out of pocket cost would be the full $1,500 deductible amount."

We did not have the gutters replaced, yet the roofing company has stated that we need to pay the full $1500 per the contract since the insurance company will only cover the cost of the gutters if they are actually replaced. The roofing company stated over the phone that the word "shouldn't" in the email means that it was not binding. I asked them to replace the gutters instead, and it turns out that this roofing company does not do any gutter work.

We do have a signed contract (11/17/18) with the roofing company stating that we will pay them up to $1500 after the insurance payouts, the amount of our deductible. I was fine paying the $1500 deductible until they said we only had to pay $300.

Do I have any recourse or should I just suck it up and pay the $1500?
