Statement to write on check to clear debt

What statement can be written on a check to mean, "cashing of this check means the bearer accepts this amount as payment for a particular debt"?

For example:
You owe $500 to a firm for account 12345.
You write a check for $400 and in the ledger is written the statement.
If the firm cashes the check, the debt is cleared, because they accepted the offer of $400.
