Just because you think the at-will employment concept is ridiculous doesn't mean it somehow doesn't apply to you. And while I know you thought you weren't talking about being fired, just how do you think employers force their employees to do/not do anything? Via the threat (implicit or explicit) of termination for non-compliance. And this is where the door to at-will employment is opened.
Regarding all those lawsuits you mentioned, those have nothing whatsoever to do with at-will terminations. People may sue and win for wrongful termination if they have been fired for reasons specifically prohibited by law. As I have already advised you, those reasons include things like race, gender, religion, age and disability. They don't include things like vehicle use, shoe colour, hair length or work performance. Period.
